2 Ingredient Healthy Pancakes!
Ok, I was completely shocked when I found this incredibly easy pancake recipe. The best part is that you only need 2 ingredients!
The batter doesn't have flour to support the mixture, so you need to make a few adjustments.
Follow these tips and you'll be a pro!
- Make the pancakes small
- Use a non stick frying pan
- Cook low and slow
- Use a thin spatula for flipping
- Blend the ingredients together with a bender
- You can add 1/8 tsp of baking powder to make them fluffy
- You can also get creative and add cinnamon or choc chips to the batter
Basic batter:
- 1 large banana, mashed (should be around 1/3 to 1/2 cup when mashed)
- 2 eggs
Instructions:
- Peel and mash the banana, stir in the egg.
- Heat a non stick skillet and lightly spray with oil. (turn the heat down to low)
- Pour a circle of batter into the pan ( you can use a tbsp of batter to make the pancakes small).
- Cook until golden brown on the underside for about a minute then cook until golden brown on the other side (30 seconds to 1 minute).
- Serve warm with whatever side you like and enjoy!
